I am an amateur baker and I love to bake for my friends and family and create things in the kitchen. I love raspberries (I think it’s more or an addiction) and chocolate.
I love recreating and putting my twist of bakes. I like anything that brings out my creative side, which is probably one of the reasons why I like baking so much.


About Me

I’ve always liked baking from a young age, I remember pestering my mom to bake fairy cakes with me and my brother, a dining chair either side of her at the worksurface where we knelt… then argued over who got the spatula, when it came to eating the left-over cake mixture in the bowl.

Several years ago, after different things happened in my life, I was diagnosed with the chronic pain condition, fibromyalgia. Due to this chronic illness I found everything difficult to do, even the things I loved, some things still are – it’s an everyday challenge. For many years I didn’t leave the house due to the pain. I needed to challenge myself some way and that was baking (even in my pjs), I’m not sure what triggered off again, maybe it was baking cookies for my brother when he came down from Uni, but I realised how much I loved doing it and it was a great achievement for me.

Unfortunately, at the time everything was done by hand, and that was not good for me physically especially with a batch of cookie dough, so I would always have to ask for a little muscle for assistance. My mom and dad could see how much I liked baking and I think they liked it too 😊, so because they could see I struggled, they got me my very first Stand Mixer, I was so excited I couldn’t believe it.

Over the years since being ill I have researched into the condition and also, I have done some online courses to try and help myself like; ME/ CFS Awareness, Life Coaching, Mindfulness and Pain Management, but Fibromyalgia is a tricky condition to manage as everyone is different.

I have also read up on different foods as a few people in my family have certain intolerances or conditions (like a gluten, wheat and lactose intolerance, or other food allergies or suffer from IBS), so I wanted to learn a little more about food so that I could still bake them things that tasted good.


Why Perfecting Bakes?

Well I’m not a professional, I am an amateur baker, so I will be still learning and perfecting my skills along the way. You may see some of my fails or bakes that have not gone quite my way, so at the end of some recipes you will see where I would like to improve or things to try next time.

The reason I started the Perfecting Bakes blogs was so that I could document all the recipes that I have tried in one place and share my love of baking with everyone. It gives me great pleasure creating things that my family and friends enjoy. I find it very flattering when they ask me to bake something again and again, then I know how much they love it.

I am also an amateur photographer, I have taken pictures of all my bakes that I have posted on this blog.

I love to research recipes, cuisines, different style and techniques and I’m always looking on food/baking blogs. Even though I was never one to put myself out there and would always worry about what other people would think, I thought that I would love to give it a go, what have I got to lose.

I am a little bit of a perfectionist and I have been told that by quite a few people… So sometimes a bake may not look the prettiest but it is the taste that counts, then the next time I will make it look better visually by learning from my mistakes and improve the presentation.

I was always hesitant about trying new foods before, but now I feel like I’m experimenting with new foods and bakes that I would not have tried leading to a new appreciation of food. I think home baking is healthier than getting something shop brought, as these are no preservatives and you know the exact ingredients you are putting in and, you can personalise bakes for your tastes.


Things that I bake often

White Chocolate Chip Cookies, my brothers favourite, he’s loved them ever since I did them when I was at High School – he calls them Cake-Cookies because they are really soft. If you want one you’ve got to be quick, they’re gone in a flash.

My Raspberry Bakewell Cake is a family favourite as everyone loves it; it’s never around long though. It’s a great cake, you can swap the raspberries out for different fruit or do a mixed fruit one.

Chocolate Fudge Cake, I love chocolate and I love decorating cakes with whipped chocolate ganache, this is normally my go to cake for a celebration cake.

My biggest critic is my mom, it’s good to get feedback as it helps me improve and I know what ever I bake I will get honest and constructive criticism, so I can improve it the next time. I think everyone will always have something new to learn when it comes to baking even if they are highly experienced.

Favourite Ingredients

Raspberries –  love them; I always like to add them into my baking. I keep some frozen in the freezer, so I always have them on hand.

Fruit – I like baking and doing desserts with fruit as I always say you’ve got to have some good with the not so good, (just so it equals it out).

Nuts – especially in my Gluten Free bakes as I find having that flavour makes them taste less ‘cardboardy’

Chocolate – I mean who doesn’t love chocolate!!

Other things that I love as well as baking

My dogs: I have a Cavalier King Charles, called Jake he is very loving and like lots of fuss. Still miss my little man Charlie, he was there half my life, a best friend who kept me company and always put a smile on my face, he’ll always be in my heart.

Taking pictures: I love take pictures and capturing memories, I’ve probably got thousands of my dogs.

Reading: I got into reading when I was first diagnosed, and I read the whole Tess Gerritsen’s Rizzoli and Isles Thriller series, after getting into the television series, and I have also read some of her other novels, I think that she is a great writer. I like a lot of crime, thriller fiction and I’ve got quite a few different baking books, I’ve taken over my mom’s bookshelf.

Drawing, Scrapbooking & Designing: I love drawing and designing things, I would help my dad design logos for his diecast models. I have always had a creative streak, I loved doing art at school and drawing as a hobby, when I did my GCSEs I took Art, Graphics and ICT as I felt that they all interlinked and there was that element of creating things.

Music: I have quite an eclectic taste as I will listen to almost anything

Film & TV: I loved the series Grimm, Leverage and Rizzoli & Isles and was disappointed when these came to an end, I am now watching NCIS and I also love watching the Great British Bake Off. Love movies too either at the cinema or at home.

Cake Decorating: This is one of the things that I would like to get into next, being able to decorate my cakes. People have created many beautiful things it’s hard to believe that it is actually cake, especially when they look so life like. I have only dipped my toe into this aspect of cake at the moment, but my sister has decorated cakes so beautifully, she has such a great imagination and creativity; I will have to have some lessons off her.
